- Card processing. You'll still pay a payment provider (Stripe, Revolut and similar are typically ~1.5–2% + ~20p per UK transaction). That's a transaction cost, not a marketplace cut — and it's a fraction of commission.
- Setup and monthly fees. A flat platform fee is fine; watch for "free" tools that quietly reintroduce per-order or per-cover charges.
- Who owns the customer data? The whole point is owning the relationship — make sure the contract says the data is yours.
- What's actually included. Ordering is only half the job; you also need a till, kitchen screens and delivery tools, or you've just moved the problem.

On the marketplaces, the customer is the platform's, not yours. Restaurants generally don't get to own or export the customer data behind aggregator orders, which makes loyalty and direct marketing impossible — and lets the platform understand (and compete for) your customer base.
